Meat Sauce

Meat sauce is dead-easy to make.

Basic ingredients are ground meat (pork, beef, veal), onion, garlic, spices, sugar and a can of plain old tomato sauce.

Onion

One onion diced

Fry gently until soft; about ten minutes.

Ground beef

One pound

Break up and stir into the fried onion

Simmer for about half an hour on low heat until the fat and water separates out. I drain the liquid into a bowl then keep the dripping for lining my bread tin and the broth for stock.

Garlic

One clove, diced fine

Stir into the onion & beef material

Curry Powder

1 teaspoon

Ground Paprika

½ teaspoon

Ground Black pepper

½ teaspoon

Ground ginger

½ teaspoon

Stir the four spices into the material

Tomato sauce

1 680ml can

Stir this until well-mixed in the material. Gently bring to boil. Simmer for ½ hour.

Sugar

½ cup

Stir this into the sauce, bring gently to the boil.

I bottle a batch into 3 1-pound jam jars and sterilize them for later use.

So this is enough for 6 meals of spaghetti and meat sauce.
